Dioscorea trifida (Indian yam or cush-cush) is a species of yam native to Central and South America. As with most yams, it is grown for its tubers which can be baked, boiled or mashed for use in soups. The tuber is starchy and is usually white, black, or purple. It is one of the few yams that were native to the Americas that still continue to be cultivated there; the others have all been supplanted by African varieties.
