Dioscorea bulbifera, called air potato or potato yam, is a member of the yam family grown for its tubers below ground and edible bulbils above. While both the tubers and bulbils are used medicinally, only the bulbils are generally edible. Some varieties produce a bitter-tasting tuber which becomes palatable after sustained boiling.
